Smokey Jack’s Mobile Pizzeria is a council approved food business. The oven is wood fired and also has LPG gas firing for occasions when an extra burst of heat is needed. The trailer has side awning (both sides) and is equiped with trestle tables, a small on board fridge, and a pie warmer (amongst other gear) for catering for a crowd. The side awnings have attachable walls for bad weather conditions. There are food grade stainless steel side work benches on each side of the oven for food preparation purposes. There is an onboard sink plus a separate double sink stand and a portable hot water unit is utilized.

The Pizzeria trailer has lights for catering on into the evening and night. The lights and fridge can operate on battery power and the Pizzeria can operate without the need to have any power input. Once well fired up (which can take around 2 hours), the oven can cook a pizza in around 5 minutes or less. The oven has a 1.3 meter diameter and can do around 5 large pizza rounds at a time.

Who is Smokey Jack? Smokey Jack is in fact John (aka Jack) Packham. After many years in the APS in Canberra he opted for a late career change to Foodie & Bon Vivant. He built the Pizzeria Trailer in Canberra in 2007 and brought it over to Perth in 2008. Smokey Jack especially likes getting along to all areas with some Viniculture and has done winery events in Chittering, Mundaring, Baldivis, Carmel Valley and the Swan Valley. Private parties, corporate events, public events and markets are amongst the many catering “gigs” undertaken by Smokey Jack’s Mobile Pizzeria.
